Upon
successfully completing the programme, the candidate will be:
- To identify and explain the role of primary, secondary and tertiary producers and identify different stages of the food supply chain.
- To describe the different needs of a Food Safety Management System and the requirements for documenting such as system.
- To identify and describe the responsibilities of management regarding the establishment and maintenance of a Food Safety Management System.
- To Identify pre-requisite programs (good farming practices) important to produce safe agricultural and food products.
- To describe the preliminary steps to be taken to enable hazard identification and analysis.
- To apply the principles of Food hazard identification and analysis (Biological, chemical, physical, allergenic) and the establishment of a HACCP plan.
- To apply the principles of HACCP plan assessment, internal monitoring, audits and corrective action.
